INSTRUCTION FOR USE
The Clef du vin is dipped repeatedly into a 100 ml glass of wine. For each second that the disc is submerged, the taste and aroma of the wine will be modified, “ageing” the wine by the equivalent of one year in your cellar.
Pour yourself a glass of wine of 100 ml, taste and memorise.
Dip the Clef du Vin disk into the glass for one second, taste again and compare.
Repeat the operation until the wine deteriorates.
WHICH WINE TO BUY? HOW TO SELECT A WINE?
If after several dips (or continuous dip of few seconds), the wine remains pleasant or improves, you can buy with confidence, it will age well.
If the wine deteriorates after one or two seconds of contact, the wine has little or no ageing capacity, and should be drunk soon.

WHEN SHOULD I DRINK THIS WINE? HOW LONG SHOULD I LAY IT DOWN FOR?
There is no absolute; everyone should drink wine the way they like it, when they like it, neither too early, nor too late!
For example, if you prefer the wine after dipping the Clef du Vin for 3 seconds, you should lay it down for three years, thus appreciating the wine at its peak (to your personal taste, of course).
HOW TO TASTE AND APPRECIATE A YOUNG WINE?
With Clef du Vin you can appreciate the real potential of an immature wine, in matter of seconds.
Clef du Vin accelerates the aromatic development of the wine’s flavours and softens its structure, or “opens up”.
Red wine wines will see their tannins softening, and their roundness appearing. The acidity of dry and white wines will be diminished, revealing the subtle flavours of the fruit. Sweet white wines will become richer – be prepared to experience a wonderful “explosion” of flavours in your mouth !
Clef du Vin allows you to enjoy today the full potential of a lay down wine, which would have otherwise waited for years.
CARE AND CLEANING
Simply rinse with warm water and dry with a cloth. Do not put the Clef du Vin in the dish washer, as damage may result.
WARRANTY
The Clef du Vin accelerates the natural ageing precess of wines. Consequently, wines with no ageing capacity may not improve and may actually deteriorate as result of using la Clef du Vin. Clef du Vin should not be used with wines that indicate deterioration during tasting.
Clef du Vin should used in accordance with the manufacturer’s instructions and recommendations contained herein.

SOPHISTICADED TECHONOLOGY
The Clef du Vin is an alloy of many metals assembled and worked in a special way.
She was born of a scientific approach applied to the observation of the tradition and practices current in the field of wine.
The Clef du Vin was invented more than 10 years Laurenzo Zanon, chemist and oenologist, professor of chemistry and biology, in collaboration with a sommelier, Franck Thomas, Meilleur Ouvrier de France, Best Sommelier of France and Europe (2000), candidate of France in the World Championship in Greece 2004.
Laurent needed a tool for decision support in the development of the wine to know when "act" in winemaking. Today, he uses the Key as follows:
When the wine in the vat, is "reduction" (closed smells of sulfur, mercaptan, or rotten egg), he uses a 10 cl glass and dip the Clef du Vin for 2 seconds. If the reduction continues, it is strongly advised to act (extract ...).
We made a simple tool to use, made accessible to individuals
Throughout his life, wine is a phase of reduction (fermentation process in vats or casks) to a phase of oxidation (wine, the wine is too old). Between these two extreme phases, it evolves along its redox curve, passing through periods of equilibrium where the wine is assessed at its maximum (depending on the tastes, of course).
What happens next during aging in bottle in good condition? The wine will, sooner or later, move to oxidation. Moreover, this phenomenon is greatly amplified at the opening of the bottle. This will considerably change its capacity for good or evil, depending on their age and maturity level.
Contact with the Clef du Vin allows you to accelerate its development in order to quantify the potential for aging wine, knowing that a second contact is equivalent to one year of aging potential (redox).
The Clef du Vin has of course invented the redox! This phenomenon has long been known. However, we have mastered how to measure, calibrated. We made a duplicable action, in a controlled, regulated.
In order to demonstrate the aging potential of wine, the Clef du Vin changes, among others, gradually redox balance of it, until its destruction (taste). Every second of contact in a 10cl glass (or a 75cl bottle, with the model "Bottle"), projects the wine a year along its redox curve (of life ...). Revealing its potential for aging, aging. To give you pleasure (or displeasure) you have to drink this wine in 1.2, .. 5 .. 10 .. years.

A second for one year, two seconds for two years ... The effect of the Clef du Vin is irreversible. The dips (contact with the wine) are cumulative (one second = one second soaking for two seconds).
The Clef du Vin is a catalyst that activates and accelerates a natural phenomenon: oxidation.
But beware! The Clef du Vin is not "age" wine.
There are a lot of other phenomena in the natural aging of the wine, the Clef du Vin is not intended to duplicate. (There are over 100 known components in wine ...).
The Clef du Vin also acts on aromatic compounds: esters, ketones, aldehydes, and the tannins. Aromatic compounds are "protected", "inhibited" by sulfur compounds (sulfur atoms "S"), very sensitive to oxidation. The hydrogen sulfide, the sulfur compounds, volatile thiols, in excess, are indeed inhibitors of flavors.
The Clef du Vin is acting more on the aliphatic chains, changing the single bonds of carbon, sulfur and hydrogen.
Three years of research were required to abut the alloy "Clef du Vin." Then seven years were needed to validate the proper calibration of a second for one year. The inventors have bought a lot of bottles at the start. Then they met every year with professional sommeliers to conduct blind tasting (duets, duo-trio, ...). The aim was to compare each year's actual results and forecasts of the Clef du Vin. The Key has been just over 95%!
Patents have been filed since 2000.
The Clef du Vin does not wear out. Everything happens at the molecular level. There is no migration of metals in wine. Simply, the Key "reorganizing" certain molecules of the wine.
What was there in the alloy? This is the subject of 4 international patents.
CURVE OF LIFE OF WINE
Point 0 indicates bottling, the birth of the wine.
The shaded area represents the disease that all bottled wines undergo a period shorter or longer (from 1 to 4 months). It's a natural evolution of the wine. He suffered a downturn and needs time to blossom in the bottle.
